A hearty, healthy cabbage soup made with tender vegetables, tomatoes, and broth. Great for meal prep, detox weeks, or cozy nights.
2 tbsp olive oil
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
4–6 cups chopped green cabbage
6 cups vegetable or chicken broth
1 tsp thyme
1 bay leaf
½ tsp paprika
Salt and black pepper, to taste
Optional: red pepper flakes, lemon juice, fresh parsley
Heat olive oil in a large pot. Sauté onion, carrots, and celery for 6–8 minutes.
Add garlic and cook for 1 more minute.
Stir in tomatoes, thyme, paprika, bay leaf, salt, and pepper.
Add cabbage and broth. Bring to a boil, then reduce heat.
Simmer 25–30 minutes until cabbage is tender.
Remove bay leaf. Adjust seasoning. Add lemon juice and parsley if desired. Serve hot.
Add beans, lentils, or meat for extra protein. Keeps 5 days in fridge or 3 months in freezer.
