A festive, creamy goat cheese log rolled in sweet cranberries and toasted pecans — perfect for holidays, wine nights, or any special gathering.

Ingredients

  • 8 oz goat cheese

  • 4 oz cream cheese

  • ⅓ cup chopped dried cranberries (plus more for coating)

  • ¾ cup chopped toasted pecans (divided)

  • ¼ tsp salt

  • Black pepper to taste

  • Optional: 1 tbsp honey, 1 tbsp chopped chives or rosemary

Instructions

  1. Toast pecans at 350°F for 6–8 minutes. Cool and chop.

  2. Mix goat cheese, cream cheese, salt, pepper, cranberries, ¼ cup pecans, and optional honey or herbs until smooth.

  3. Chill for 15–30 mins, then shape into a log using plastic wrap.

  4. Chill again, then roll in remaining cranberries, pecans, and herbs.

  5. Serve immediately or chill until needed. Bring to room temperature before serving.

Notes

  • Make up to 3 days ahead.

  • Use gloves for easier rolling.

  • Serve with crackers, fruit, or sliced baguette.
