A festive, creamy goat cheese log rolled in sweet cranberries and toasted pecans — perfect for holidays, wine nights, or any special gathering.
8 oz goat cheese
4 oz cream cheese
⅓ cup chopped dried cranberries (plus more for coating)
¾ cup chopped toasted pecans (divided)
¼ tsp salt
Black pepper to taste
Optional: 1 tbsp honey, 1 tbsp chopped chives or rosemary
Toast pecans at 350°F for 6–8 minutes. Cool and chop.
Mix goat cheese, cream cheese, salt, pepper, cranberries, ¼ cup pecans, and optional honey or herbs until smooth.
Chill for 15–30 mins, then shape into a log using plastic wrap.
Chill again, then roll in remaining cranberries, pecans, and herbs.
Serve immediately or chill until needed. Bring to room temperature before serving.
Make up to 3 days ahead.
Use gloves for easier rolling.
Serve with crackers, fruit, or sliced baguette.
