A rich and spicy Cajun chicken pasta tossed in a creamy garlic parmesan sauce with tender peppers and onions. A quick, flavorful dinner with Southern flair.

Ingredients

  • 2 chicken breasts, thinly sliced

  • 2 tbsp Cajun seasoning

  • Salt & pepper, to taste

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 8 oz pasta (penne, linguine, or fettuccine)

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • ½ onion, sliced

  • 3 garlic cloves, minced

  • 1 cup heavy cream

  • ½ cup grated parmesan

  • ½ cup reserved pasta water

  • Fresh parsley (optional garnish)

Instructions

  1. Cook pasta in salted water until al dente. Reserve ½ cup pasta water, then drain.

  2. Season chicken with Cajun seasoning, salt, and pepper. Sear in olive oil and butter over medium-high heat, 3–4 minutes per side. Set aside.

  3. In the same pan, sauté bell peppers and onion until soft. Add garlic and cook 1 minute.

  4. Lower heat, add cream and parmesan. Stir until thickened. Add pasta water as needed.

  5. Return chicken and pasta to pan. Toss to coat. Adjust seasoning.

  6. Serve hot, garnished with parsley or extra cheese.

Notes

  • Use shrimp or sausage instead of chicken.

  • Adjust Cajun seasoning to preferred spice level.

  • For dairy-free: use coconut cream and vegan cheese.
