Ingredients

  • 1 lb boneless chicken breasts or thighs

  • Salt, pepper, 1 tsp Italian seasoning

  • 23 tbsp olive oil

  • 1 zucchini, diced

  • 1 bell pepper, diced

  • 2 cups cherry tomatoes

  • 23 garlic cloves, minced

  • 1 cup orzo pasta

  • 2 ½ cups chicken or vegetable broth

  • 2 tbsp balsamic vinegar

  • 1 tsp honey or maple syrup (optional)

  • 2 cups fresh spinach

  • Fresh basil or parsley (for garnish)

  • Optional: Shaved Parmesan

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.

  2. Sear in olive oil until golden; remove from pan.

  3. Sauté vegetables until tender.

  4. Add orzo, broth, balsamic, and honey. Stir and return chicken to pan.

  5. Cover and simmer for 10–12 minutes, stirring occasionally.

  6. Stir in spinach and let wilt.

  7. Garnish with herbs and Parmesan. Serve warm.
