- 3 lbs beef chuck roast
- 4 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
- Preheat oven to 325°F.
- Season beef with salt and pepper.
- Heat oil in Dutch oven over medium-high heat.
- Sear beef on all sides until browned, then remove.
- Add onions to pot and cook until caramelized.
- Stir in garlic and thyme, cook for 1 minute.
- Return beef to pot, add broth and Worcestershire sauce.
- Add bay leaves, cover, and braise in oven for 3 hours.
- Remove bay leaves before serving.
Notes
- Slice onions thin for even caramelization.
- Use a heavy-bottomed pot for even heat.
- Let roast rest 10 minutes before slicing.
