Meatballs:

  • 1 lb lean ground turkey

  • 1/4 cup chopped parsley

  • 2 tbsp chopped mint

  • 1/4 cup grated onion

  • 2 garlic cloves, minced

  • Zest of 1 lemon

  • 1/4 cup breadcrumbs or almond flour

  • 1 egg

  • 1/2 tsp salt

  • 1/4 tsp black pepper

Tzatziki Sauce:

  • 1 cup Greek yogurt

  • 1/2 cup grated cucumber (squeezed dry)

  • 1 garlic clove, minced

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tbsp fresh dill, chopped

  • Salt and pepper, to taste

Instructions

  • Combine all tzatziki ingredients in a bowl. Mix well and refrigerate.

  • In another bowl, mix turkey, herbs, onion, garlic, lemon zest, breadcrumbs, egg, salt, and pepper until just combined.

  • Form into 1.5-inch meatballs.

  • Bake at 400°F for 18–20 minutes, or pan-fry in olive oil until golden and cooked through.

  • Serve warm with chilled tzatziki.

Notes

  • For gluten-free, use almond flour or gluten-free breadcrumbs.

  • Make ahead for easy lunches or dinner prep.

  • Serve in pita or over rice for a full meal.
