For the Dressing
1/2 cup Greek yogurt or vegan mayo
1/4 cup olive oil
1 garlic clove
1 small shallot
Juice of 1 lemon
1/4 cup basil
1/4 cup parsley or chives
1–2 cups spinach or kale (optional)
1 tsp Dijon mustard
Salt and pepper to taste
For the Salad
2 cups green cabbage, finely chopped
1/2 English cucumber, diced
2 green onions, sliced
1/4 cup fresh herbs
1/2 avocado (optional), diced
1/3–1/2 cup dressing
For the Sandwich
4 slices hearty bread (sourdough, multigrain, pita)
Optional: leafy greens, cheese, grilled protein
Blend all dressing ingredients until smooth and creamy.
In a bowl, combine salad ingredients and toss with dressing.
Toast bread slices and layer with salad and extras.
Press together, slice, and enjoy immediately.
