  • 1/2 cup Greek yogurt or vegan mayo

  • 1/4 cup olive oil

  • 1 garlic clove

  • 1 small shallot

  • Juice of 1 lemon

  • 1/4 cup basil

  • 1/4 cup parsley or chives

  • 12 cups spinach or kale (optional)

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

For the Salad

  • 2 cups green cabbage, finely chopped

  • 1/2 English cucumber, diced

  • 2 green onions, sliced

  • 1/4 cup fresh herbs

  • 1/2 avocado (optional), diced

  • 1/31/2 cup dressing

For the Sandwich

  • 4 slices hearty bread (sourdough, multigrain, pita)

  • Optional: leafy greens, cheese, grilled protein

Instructions

  1. Blend all dressing ingredients until smooth and creamy.

  2. In a bowl, combine salad ingredients and toss with dressing.

  3. Toast bread slices and layer with salad and extras.

  4. Press together, slice, and enjoy immediately.

Notes

Keep salad separate from bread for meal prep. Add beans or tofu for extra protein.
