Chewy, naturally sweetened granola bars made with oats, nut butter, and wholesome add-ins. No baking required — just mix, press, chill, and enjoy.
2 cups rolled oats
½ cup nut butter (peanut, almond, or cashew)
⅓ cup honey or maple syrup
2 tbsp chia seeds or flaxseed (optional)
½ tsp vanilla extract
¼ tsp salt
½ cup total of add-ins (chocolate chips, dried fruit, nuts, seeds, coconut)
Line an 8×8-inch pan with parchment.
Warm nut butter and honey until smooth. Stir in vanilla.
In a large bowl, mix oats, seeds, salt, and add-ins.
Pour wet mixture over dry and stir well.
Press firmly into the pan. Chill for 1–2 hours.
Slice into bars and store in fridge or freezer.
Customize with your favorite mix-ins.
For firmer bars, bake at 325°F for 15–20 minutes.
