4 small tortillas (corn or flour)
4 eggs
¾ cup cottage cheese
1 avocado, sliced
½ cup cherry tomatoes, diced
½ cup spinach or arugula
¼ red onion, thinly sliced

Warm tortillas in a dry skillet until soft.
