Bright and refreshing, these no-bake Lemon Poppy Seed Energy Bites are a healthy snack made with dates, oats, nut butter, and fresh lemon. Naturally sweet, gluten-free, and freezer-friendly.

Ingredients

  • 1 cup Medjool dates, pitted

  • ¼ cup almond or cashew butter

  • 2 tbsp lemon juice

  • Zest of 1 lemon

  • 1 tsp vanilla extract

  • ¾ cup rolled oats

  • ½ cup almond flour

  • 1 tbsp poppy seeds

  • Pinch of salt

Instructions

  1. If dates are dry, soak in warm water for 10 minutes and drain.

  2. Blend dates, nut butter, lemon juice, zest, and vanilla until smooth.

  3. Add oats, almond flour, poppy seeds, and salt. Pulse to form dough.

  4. Roll into 1-inch balls and chill for 20 minutes to firm up.

  5. Store in the fridge up to 1 week or freeze for longer.
