Soft, chewy oatmeal protein cookies made with nut butter, banana, and your favorite protein powder — perfect for a healthy snack or breakfast treat.

Ingredients

  • 1 ripe banana

  • ½ cup almond or peanut butter

  • 1 egg (or flax egg)

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1 cup rolled oats

  • ½ cup protein powder

  • ½ tsp cinnamon

  • ¼ tsp baking soda

  • Pinch of salt

  • ⅓ cup dark chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, mash the banana. Stir in nut butter, egg, maple syrup, and vanilla.

  3. In another bowl, mix oats, protein powder, cinnamon, baking soda, and salt.

  4. Combine wet and dry ingredients. Fold in chocolate chips or nuts.

  5. Scoop into balls, flatten slightly, and place on the baking sheet.

  6. Bake for 10–12 minutes or until lightly golden. Cool before serving.

Notes

  • Use plant-based protein for vegan option.

  • Store in fridge or freezer for longer shelf life.
