Juicy, crispy Oven Roasted Garlic Butter Chicken made with golden skin-on chicken, rich garlic-herb butter, and a hint of lemon. A flavorful, easy dinner for any occasion.
4 bone-in, skin-on chicken thighs or breasts
6 tbsp unsalted butter
6 cloves garlic, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
1 tbsp fresh parsley, chopped (plus more for garnish)
Zest and juice of 1 lemon
1 tbsp olive oil
Salt and pepper, to taste
Preheat oven to 400°F (200°C).
Melt butter in a saucepan over low heat. Add garlic, rosemary, thyme, and lemon zest. Cook until fragrant.
Pat chicken dry and season with salt and pepper.
(Optional) Sear chicken skin-side down in olive oil for 3–4 minutes. Flip and sear for another 2 minutes.
Brush garlic butter all over chicken. Transfer skillet or chicken to a baking dish.
Roast uncovered for 30–40 minutes, basting halfway.
Broil for 2–3 minutes for extra crispy skin.
Rest for 5 minutes. Garnish with parsley and a squeeze of lemon.
