This single serve protein cookie is soft, chewy, and packed with over 15g of protein. Made with almond flour, nut butter, and protein powder, it’s the perfect quick-fix snack or healthy dessert.
1 scoop (25–30g) protein powder
1 tbsp almond butter or peanut butter
1 tbsp almond flour or oat flour
1–2 tsp maple syrup or monk fruit syrup
1 tbsp milk (almond, oat, or dairy)
1–2 tbsp chocolate chips or nuts
Optional: pinch of salt and ⅛ tsp baking powder
In a bowl, mix all ingredients into a soft dough.
Form into a cookie shape on a plate or small baking tray.
Microwave: Cook for 35–45 seconds.
Oven: Bake at 350°F for 7–9 minutes.
Let cool slightly before eating.
Use plant-based protein for vegan option.
Add chopped nuts or berries for variety.
